Canoe Tripper Kevin Callan Takes on Cooking

Camping and canoe enthusiast Kevin Callan’s latest calling is cooking. That’s right. You can now learn some of his tricks of the canoeing culinary trade in his latest offering, The New Trailside Cookbook: 100 Delicious Recipes for the Camp Chef written in conjunction with dietitian Margaret Howard.

Packed with easy, lightweight recipes and comprehensive outdoor cooking information for canoeists and wilderness campers, the pocket-sized book calls upon both the authors’ strengths. Howard creates the recipes and Callan the how-to information, it is a perfect tandem canoe match: say goodbye to bland, canned meals and hello to satisfying, fireside dishes.

“It covers everything from making great camp coffee to GORP, from foraging for wild edibles to mastering meals after the ice melts,” says Firefly Books’ Valerie Hatton. “It’s the perfect book for canoeists of all walks. Kevin’s wilderness skills and Margaret’s culinary experience combine to please outdoor enthusiasts of all ages and levels.”

Recipes indicate what preparation can be done at home, making cooking at camp quick and easy. Dehydrated options and instructions are listed for campers outstaying their cooler’s capacity. Dishes include such hearty morning starts like Peanut Butter Banana Muffins; easy lunches like Mushroom Quinoa Salad; quick pickups such as Apricot Sunflower Seed Cereal Bars; dinners that make the most of fresh catch, like Herb-stuffed Grilled Fish; and such desserts as Roasted Rhubarb with Honey and Rosemary. There’s also a section dedicated to cold-weather winter camping, and a chapter on Weekend Gourmet for special lakeside meals.

Many canoeists are already familiar with Callan’s works. He’s the author of 15 books, including The Happy Camper and Wilderness Pleasures, and is key speaker at most major North American outdoor canoeing events. He’s also a celebrated TV personality promoting the outdoors. Howard’s books include The Complete Book of Small-Batch Preserving and All Fired Up: Outdoor and Indoor Grilling.
